Spice Things Up

Try these fresh ideas for dinner: if you want to use fresh spices and herbs instead of your usual dried spices and herbs, simply triple the amount of fresh in place of dried.

Conversely, if you run out of fresh spices and herbs, use 1/3 to 1/4 the amount of dried in place of fresh.

If you run out of your favorites, you can substitute as follows: for basil, you can use marjoram or oregano; for bay leaf, you can use mint; for cilantro, you can use Italian parsley; for paprika, you can use cayenne pepper; for rosemary, you can use sage.
