A Recipe for Chai

In a medium pot on medium-high heat, combine 3 ½ cups water; 8 whole cloves; ½ teaspoon fresh ginger, grated; 2 whole cardamom pods; and a pinch of salt. Bring to a boil and let boil for 5 minutes, then reduce heat to medium and add 4 black tea bags. Simmer 3 to 4 minutes. Add 1 cup milk, return to medium-high heat, and bring to a boil, stirring occasionally. Remove from heat and strain. Add honey or stevia to taste, and serve. Serves 4.
